1 Tbs. olive oil

1 onion, chopped

1 clove garlic, chopped

3 cups vegetable stock

4 tsp. sour cream

Recipe -

1 In large pot, heat oil over medium heat; add onion, garlic and ginger. 

Cook, stirring, until starting to soften, about 5 min.

2 Add carrots and stock; cook until tender, 15 min. In batches, puree; season with salt.
